What is Poutine?

Poutine is Canadian fast food. The basic recipe originated in Quebec...it consists of french fries and cheese curds smothered in a rich brown gravy. We also add peas and hamburger. The hot fries, hamburger, peas, and gravy melt the cheese making it stretch which enhances the desired flavor and texture. It makes a delicious hearty meal.

What is a cheese curd?

A cheese curd is a substance created from curdled milk. It is a mixture of bacterial culture and enzyme similar in chemistry to a typical cheese product. The difference is, the end product has the same firmness and density as cheese but it has a unique springy or rubbery texture.
